Kalaheo Banana Bread


Preheat oven to 340F. Line baking pan(s) with parchment, or back as muffins with liner. Bake in 5 x 9 inch pan, or as muffins.

I mix and sift dry ingredients in one large bowl, liquid in another. Fold liquid into dry and just combine, without over-mixing.

Dry:

  • 225g all-purpose flour
  • 120g brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt

Liquid:

  • 360g banana, mashed or pureed
  • 1 egg, beaten
  • 100g yogurt
  • 50g coconut oil (or softened butter)
  • 2 tsp vanilla (or more)
  • 12 drops banana extract (optional)

Optional: chopped walnuts, raisins, chocolate chips to taste

Bake about one dozen muffins or as a loaf, 40 to 60 minutes. Test that skewer comes out clean.
