Preheat oven to 340F. Line baking pan(s) with parchment, or back as muffins with liner. Bake in 5 x 9 inch pan, or as muffins.
I mix and sift dry ingredients in one large bowl, liquid in another. Fold liquid into dry and just combine, without over-mixing.
Dry:
- 225g all-purpose flour
- 120g brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
Liquid:
- 360g banana, mashed or pureed
- 1 egg, beaten
- 100g yogurt
- 50g coconut oil (or softened butter)
- 2 tsp vanilla (or more)
- 12 drops banana extract (optional)
Optional: chopped walnuts, raisins, chocolate chips to taste
Bake about one dozen muffins or as a loaf, 40 to 60 minutes. Test that skewer comes out clean.
