Preheat oven to 340F. Line baking pan(s) with parchment, or back as muffins with liner. Bake in 5 x 9 inch pan, or as muffins.
Mix and sift dry ingredients in one large bowl, liquid in another. Coconut oil will clump if cold, you may need to slightly warm before mixing. Fold liquid into dry and just combine, without over-mixing.
Dry:
- 225g all-purpose flour
- 120g brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
Liquid:
- 360g banana, mashed or pureed
- 1 egg, beaten
- 100g yogurt (or milk)
- 50g coconut oil (or softened butter)
- 2 tsp vanilla (or more)
- 12 drops banana extract (optional)
Optional: chopped walnuts, raisins, chocolate chips to taste
Bake about one dozen muffins or as a loaf, 40 to 60 minutes. Test that skewer comes out clean.
